    鰻ひつまぶしの本場・名古屋に第1号店を構える広島出身の店主が故郷に初出店。身の厚み、脂のノリ、大きさと3つの厳選ポイントをクリアした最高の状態の鰻のみを生きたまま仕入れています。 自慢のタレに使用する醤油は愛知県産にこだわり、醤油本来のコクを残したままで甘さはすっきり。 もちろん焼きにもこだわり、鰻を高温の炭火で焼き上げる際に鰻の持つ独自の脂を全体に廻しながら皮はパリッと、身はふっくらとさせ余韻が残る旨さを追求しています。 お店で捌く鮮度抜群のニホンウナギを是非ご賞味ください。 A Hiroshima-born owner, whose first store was established in Nagoya—the original home of eel hitsumabushi—has now opened his first location in his hometown. We source only the finest live eels that meet our three strict selection criteria: thickness of flesh, richness of fat, and size. We carefully select soy sauce from Aichi Prefecture for our signature tare, preserving the soy sauce's natural richness while keeping the sweetness light and refreshing. We are also of course meticulous about the grilling process. By cooking the eel over high-temperature charcoal, we allow its natural fats to circulate throughout, achieving a crispy skin and plump flesh—all in pursuit of a rich, lingering flavor. Please enjoy our exceptionally fresh Japanese eel, expertly prepared at our restaurant.

    名古屋名物ひつまぶし A Nagoya specialty, Hitsumabushi

    ひつまぶしは鰻の蒲焼を細かく刻み、お櫃(ひつ)に盛りつけた愛知県名古屋市の郷土料理のひとつ。 発祥は明治時代から大正時代と言われ、調理した鰻の切れ端を活用し、まかないとして作られたという説が一般である。 木製のお櫃に盛りつけられた鰻とご飯を食べる際にまぶして(まぜて)食べることから、ひつまぶしと名付けられた。 ひつまぶしの特徴は4段階で楽しむ食べ方だが、「炭火焼 鰻のうな輝 広島店」では5通りの楽しみ方を用意。 まずはそのまま鰻本来の味を楽しみ、2杯目は葱・海苔・山葵・山椒などお好みの薬味で。 3杯目は味付生卵をかけ、4杯目は鰻のうな輝自慢の25種類の薬膳を使用した出汁で茶漬けにし、5杯目は一番気に入った食べ方で鰻の様々な味わいを堪能することができる。 Hitsumabushi is a traditional dish from Nagoya, Aichi Prefecture, consisting of finely chopped eel kabayaki (eel dipped and broiled in soy-based sauce) over rice in a wooden container called "ohitsu". It is believed to have originated between the Meiji and Taisho periods. The most common theory is that it was originally a staff meal, made using leftover pieces of cooked eel. The name Hitsumabushi comes from the way the grilled eel and rice are served in a wooden container (ohitsu) and mixed together (mabushi). A special characteristic of hitsumabushi is its four-step dining experience, but at Charcoal grilling Eel dishes UNAKI Hiroshima , we offer five unique ways to enjoy it. First, enjoy the natural flavor of the eel as is. For the second serving, add your choice of condiments such as green onions, nori (seaweed), wasabi, or Japanese pepper for an enhanced taste. For the third serving, drizzle a seasoned raw egg over the eel and rice. The fourth serving transforms into chazuke by adding a special broth made with 25 types of healing herbs, a signature of Unaki. Finally, for the fifth serving, enjoy your favorite style once more, allowing you to fully experience the diverse flavors of the eel.

    広島の地元民はもちろん、日本国内外の観光客からも愛されるお好み焼きの名店のひとつ「薬研堀 八昌」で10年以上修行した店主が青のれんの八昌の歴史と味を受け継ぐ新店。 質の良い食材を使用する、というこだわりのひとつがキャベツで、契約農家だけでなく季節によって仕入れる産地を変え、ほとんど調味料は加えていません。 また、麺は生麺を一度茹でてから焼くことでパリッとした仕上がりに。 熱々でボリューム満点の本場の味をご堪能ください。 A new restaurant continuing the history and flavors of Okonomiyaki Hassho, known for its signature blue noren (shop curtain), led by a chef who trained for over 10 years at “Okonomiyaki Yagenbori Hassho”, one of Hiroshima’s most beloved okonomiyaki restaurants, cherished not only by locals but also by visitors from across Japan and abroad. We are committed to using high-quality ingredients, especially cabbage, sourced not only from contracted farms but also from different regions depending on the season. We add minimal seasoning to let the natural flavors shine. In addition, our noodles are first boiled and then grilled to achieve a perfectly crisp texture.     広島お好み焼き Hiroshima Okonomiyaki

    お好み焼きの祖先は安土桃山時代、千利休が考案したお茶菓子「麩の焼き」と言われているが、大正時代頃に子どものおやつとして親しまれた「一銭洋食」が現在の広島お好み焼きの前身と言われている。 昭和20年8月6日、広島市に原子爆弾が投下され、食糧難による飢えに人々が苦しむ中、空腹をいやす食べ物として「一銭洋食」が再び作られ始めた。 戦後、アメリカから支援物資として配給された少しの小麦粉を多めの水で溶き、葱やキャベツ、もやしなどを焼いて食べていた。 また、広島は鉄を扱う工場が多く、比較的鉄板を手に入れやすい環境だったことも、広島お好み焼きが普及したきっかけに。 1975年、広島東洋カープがセ・リーグ初優勝するとテレビ中継され、広島市内のお好み焼き店がテレビに映ったことで人々から注目され、広島のお好み焼きはご当地グルメとして愛され続けている。 The origin of okonomiyaki is said to be Funoyaki, a tea confection created by Sen no Rikyu during the Azuchi-Momoyama period. However, the direct predecessor of modern Hiroshima-style okonomiyaki is believed to be Issen Yoshoku, a popular children's snack from the Taisho era. On August 6, 1945, an atomic bomb was dropped on Hiroshima, and amid the suffering caused by food shortages and hunger, Issen Yoshoku began to be produced again as a food to relieve people's hunger. After the war, with only a small amount of flour provided by the United States as part of relief supplies, people would dilute it with plenty of water and grill it together with spring onions, cabbage, bean sprouts, and other ingredients. Additionally, Hiroshima had an abundance of ironworks factories, making it easier to obtain cooking teppan iron griddles, which contributed to the spread of Hiroshima-style okonomiyaki. In 1975, when the Hiroshima Toyo Carp won their first Central League championship, the victory was televised, and local okonomiyaki restaurants in Hiroshima appeared on screen, bringing attention to Hiroshima's okonomiyaki. Since then, Hiroshima-style okonomiyaki has remained a beloved local specialty.

    広島ゆかりの武家茶道 上田宗箇流が初監修するカフェ。 カジュアルなカフェスタイルでありながら、店内の至る所から武家文化・茶道文化に触れることができる場所です。 こだわりの抹茶は広島県尾道市にある「宇治園製茶」と、京都府・寺町二条に本店を構える「一保堂茶舖」の濃茶・薄茶を使用。季節の上生菓子などと楽しめる抹茶をはじめ、抹茶ラテ、抹茶フロートなど親しみあるメニューを上質な空間で味わうことができます。 また、店内では「SOKO CAFÉ」オリジナルグッズも販売しており、思い出をカタチに残せます。 A café supervised for the first time by the Ueda Soko School, a samurai tea tradition with deep ties to Hiroshima. Though the café has a casual style, you can experience both the samurai and tea ceremony cultures from every corner of the interior. The carefully selected matcha is sourced from Ujien Seicha in Onomichi, Hiroshima, and Ippodo Tea, which has its main store in Teramachi-Nijo, Kyoto. Both can be prepared as koicha (thick tea) and usucha (standard thin tea ). In this refined space, you can enjoy familiar menu items such as matcha, matcha lattes, matcha floats, and seasonal traditional Japanese sweets. In addition, the store sells original SOKO CAFÉ goods, allowing you to take home a piece of the experience as a keepsake.

    上田宗箇流 Ueda Soko Tradition

    初代上田宗箇(上田重安)は、はじめ丹羽長秀、のちに秀吉の側近大名となり、桃山時代を代表する武勇で知られる武将である。 茶道ははじめは千利休、ついで古田織部の門下であった。 大坂夏の陣では、泉州樫井の戦いに敵の猛攻を阻む大功を挙げ、徳川家康、秀忠から激賞された。 この戦いの最中、急迫する敵を待ち受けながら、宗箇は平然として小刀を持って竹薮の竹を切り、茶杓を二本削っていた。 これが有名な「敵がくれ」の茶杓にまつわる逸話である。 元和5年(1619)、浅野長晟の芸州入りに従って来広した宗箇は、長晟の命により、泉水屋敷(今の縮景園)の作庭にとりかかった。 その他にも徳島城や名古屋城などの作庭や、茶碗などの逸品が多く残り文武両芸に秀でた人であったと考えられる。 宗箇の到達した高い精神の世界は、今も広島の地に息づいている。 Representing the Momoyama period, the first-generation Ueda Soko (Ueda Shigeyasu) was a warrior renowned for his bravery, initially serving under Niwa Nagahide and later becoming a close daimyo (feudal lord) of Toyotomi Hideyoshi. The tea ceremony initially began under the guidance of Sen no Rikyu, and later under that of Furuta Oribe. In the Summer Campaign of the Siege of Osaka, Soko achieved great success in repelling the enemy's fierce attacks at the Battle of Kashii in Senshu, which earned him high praise from Tokugawa Ieyasu and Tokugawa Hidetada. While calmly awaiting the imminent advance of the enemy during this battle, Soko cut bamboo from a thicket with a small knife and carved two tea scoops for preparing tea. This anecdote describes the famous "teki-gakure" (awaiting the enemy) tea scoop. In 1619, Soko, who had followed Asano Nagaakira to Geishu (present-day Hiroshima), began designing the gardens of Sensui-yashiki (now Shukkeien Garden) under the command of Nagaakira. Regarded as accomplished in both martial and cultural arts, he also left behind many masterpieces such as the designs for the Tokushima Castle and Nagoya Castle gardens, as well as exquisite tea bowls. Even now, the high spiritual realm that Soko attained still resonates throughout Hiroshima.

    全国初となる、お城の中で和弓の体験ができる「広島城 射楽」は、伝統的な矢場の様式に弓道の要素を取り入れ、現代版にアレンジして復活させた遊戯店。 年齢、性別、国籍、弓道経験を問わずに遊びながら和弓に触れ、楽しさや面白さはもちろん、広島城の歴史や文化に親しむことができます。 来店記念品として、当日の成績がわかるステッカーも贈呈。 弓道を通して地元民と観光客が交流し、記録にも記憶にも残る広島体験になります。 HIROSHIMA CASTLE SHARAKU, the first of its kind in the country, offers an experience of Japanese archery inside a castle. It incorporates elements of the traditional yaba (archery range), blending them with modern adaptations to create a unique recreational facility where visitors can enjoy the art of Kyudo. Visitors of all ages, genders, nationalities, and skill levels can have fun and become familiar with Hiroshima Castle’s history and culture. As a special souvenir of their visit, guests will receive a sticker showing their results for the day. Through Kyudo, locals and tourists can interact with one another, creating a Hiroshima experience that remains memorable both in records and in their hearts.

    三矢の訓 Sanya no Kun: “The Three Arrows”

    侍の武芸のひとつでもある和弓。 広島には「三矢の訓」という逸話が残されている。 戦国時代、中国地方をひとつにまとめた毛利元就が長男・隆元、次男・元春、三男・隆景に一家の結束を説いた長文の手紙を書いたことが由来している。 この手紙が、「一本の矢は折れやすいが、三本重ねれば折れない」という「三矢の訓」のもとになった。 その精神はプロサッカーリーグであるサンフレッチェ広島の名前の由来にもなり、日本語の「三(サン)」とイタリア語の「矢(フレッチェ)」を合わせて作った造語で、三本の矢という意味だ。 「広島城 射楽」では、そんな三矢の訓やお城の堀の小窓など、弓道にまつわる歴史文化も実感することができる。 Kyudo, or Japanese archery, was one of the martial arts practiced by the Samurai. Hiroshima is home to the legend known as the "Three Arrows" (Sanya no Kun). During the Sengoku period, Mori Motonari, who unified the Chugoku region, wrote a long letter to his eldest son, Takamoto, second son, Motoharu, and third son, Takakage, urging them to maintain family unity. This letter is the origin of the "Three Arrows" proverb, which states, "One arrow is easily broken, but when three are bundled together, they cannot be broken.” The spirit of this proverb also inspired the name of the professional football team Sanfrecce Hiroshima. It is a coined word created by combining the Japanese word “San” ("three") and the Italian word "freccia" ("arrows"), symbolizing "Three arrows." At "HIROSHIMA CASTLE SHARAKU," visitors can experience not only the art of archery but also the historical and cultural aspects related to Kyudo archery, such as the lessons of the proverb “Three Arrows” and the small windows of the castle's moat.
